- 4 cloves garlic
- 1 tablespoon fresh ginger
- 2 tablespoons curry powder
- 1 can canned tomatoes
- 1 cup coconut milk
- 2 cups basmati rice
- 1 bunch fresh cilantro
Instructions
- Chop the onion, garlic, and ginger.
- In a large skillet, heat some oil over medium heat. Add the onion and sauté until soft and translucent.
- Add the minced garlic and fresh ginger, cooking briefly until aromatic.
- Sprinkle the curry powder into the mixture, stirring until fragrant.
- Add the chicken thighs, cooking until browned on all sides.
- Pour in the canned tomatoes with their juices and stir together.
- Add the coconut milk, bring to a gentle simmer, and let cook for about 20 minutes until the chicken is thoroughly cooked.
- Cook the basmati rice according to package instructions.
- Serve the curry over rice and garnish with fresh cilantro.
Notes
For added flavor, marinate chicken in curry powder and yogurt beforehand. Consider adding vegetables or using different proteins for variations.
