Italian Antipasto Skewers with Marinated Tortellini and Mozzarella

Description

A delightful blend of flavors with marinated tortellini, creamy mozzarella, and savory salami on a skewer, perfect for any gathering.


Ingredients

  • 9 oz cheese tortellini (cooked and cooled)
  • 1 cup mozzarella balls (ciliegine)
  • 1 cup cherry tomatoes
  • 12 slices salami, halved and folded
  • 1/2 cup green olives
  • 1/2 cup Kalamata olives
  • 1/3 cup fresh basil leaves
  • 1/2 cup Italian dressing or herb marinade

Instructions

  1. Cook tortellini according to package instructions, then drain and let cool.
  2. Toss cooled tortellini in Italian dressing or herb marinade and marinate in the refrigerator for at least 30 minutes.
  3. Rinse and dry cherry tomatoes and fresh basil leaves.
  4. Cut each slice of salami in half and fold each half into quarters.
  5. Pat mozzarella dry and drain olives.
  6. Assemble skewers by threading tortellini, salami, mozzarella, olives, cherry tomatoes, and basil onto sticks.
  7. Brush assembled skewers lightly with leftover marinade.
  8. Chill in the refrigerator until ready to serve.

Notes

Best served cold or at room temperature. Can be made a day in advance and stored in an airtight container.
