Description

Ingredients

  • 2 pounds beef chuck, cut into chunks
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 1 cup red wine
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley, for garnish
  • Pasta of choice, for serving

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Brown the beef on all sides, then remove it from the pot and set it aside.
  3. In the same pot, add the onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  4. Stir in the garlic and cook for an additional minute.
  5. Return the browned beef to the pot. Add the crushed tomatoes, red wine, tomato paste, oregano, basil, salt, and pepper.
  6. Bring to a simmer, cover, and reduce the heat to low. Cook slowly for 120-180 minutes, until the beef is fork-tender.
  7. Serve over cooked pasta and garnish with fresh parsley.

Notes

For added flavor, consider using homemade broth instead of water.
