- 2 pounds beef chuck, cut into chunks
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 1 cup red wine
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley, for garnish
- Pasta of choice, for serving
Instructions
- Heat the olive oil in a large pot over medium heat.
- Brown the beef on all sides, then remove it from the pot and set it aside.
- In the same pot, add the onion, carrots, and celery. Cook until softened, about 5-7 minutes.
- Stir in the garlic and cook for an additional minute.
- Return the browned beef to the pot. Add the crushed tomatoes, red wine, tomato paste, oregano, basil, salt, and pepper.
- Bring to a simmer, cover, and reduce the heat to low. Cook slowly for 120-180 minutes, until the beef is fork-tender.
- Serve over cooked pasta and garnish with fresh parsley.
Notes
For added flavor, consider using homemade broth instead of water.
