- 8 oz bow tie pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 red onion, diced
- 1 cup bell pepper, diced
- 1/2 cup black olives, sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
Instructions
- Cook the pasta: Boil water in a large pot. Add the bow tie pasta and cook according to the package instructions until al dente. Drain and rinse with cold water to stop the cooking process.
- Combine veggies: In a large mixing bowl, add the cooked pasta, cherry tomatoes, diced cucumber, red onion, bell pepper, black olives, and crumbled feta cheese.
- Make the dressing: In a small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper until emulsified.
- Mix: Pour the dressing over the pasta and veggies. Toss gently to ensure everything is well-coated.
- Chill: Cover and place in the refrigerator for at least 30 minutes before serving.
Notes
For a fresh garnish, sprinkle with basil or parsley before serving. This can be a great addition to grilled chicken or shrimp.
