Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 red onion, diced
  • 1 cup bell pepper, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. Cook the pasta: Boil water in a large pot. Add the bow tie pasta and cook according to the package instructions until al dente. Drain and rinse with cold water to stop the cooking process.
  2. Combine veggies: In a large mixing bowl, add the cooked pasta, cherry tomatoes, diced cucumber, red onion, bell pepper, black olives, and crumbled feta cheese.
  3. Make the dressing: In a small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper until emulsified.
  4. Mix: Pour the dressing over the pasta and veggies. Toss gently to ensure everything is well-coated.
  5. Chill: Cover and place in the refrigerator for at least 30 minutes before serving.

Notes
