- 1 French baguette, sliced into 1/2-inch thick pieces
- 2 large ripe tomatoes, diced
- 1 cup fresh mozzarella, diced
- 1/4 cup fresh basil leaves, chopped
- 2 cloves garlic, minced
- 2 tablespoons extra-virgin olive oil, plus more for brushing
- 1 tablespoon balsamic vinegar
- Salt and freshly ground black pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Arrange the sliced baguette pieces in a single layer on the sheet.
- Lightly brush each slice of bread with olive oil.
- Toast the bread in the oven for about 5-7 minutes, or until golden and crispy. Once done, remove the baking sheet from the oven and set aside.
- In a large bowl, combine the diced tomatoes, mozzarella, and basil.
- Add the minced garlic, 2 tablespoons of olive oil, and balsamic vinegar to the mixture. Stir gently to combine.
- Season the topping with salt and freshly ground black pepper to taste.
- Allow the mixture to sit for about 10 minutes at room temperature.
- Generously spoon the tomato-mozzarella mixture onto each toasted baguette slice.
- Drizzle with extra olive oil if desired and enjoy!
Notes
Best served immediately to keep the bread crispy. Pair it with a chilled white wine for an elevated experience.
