Ingredients

  • 1 French baguette, sliced into 1/2-inch thick pieces
  • 2 large ripe tomatoes, diced
  • 1 cup fresh mozzarella, diced
  • 1/4 cup fresh basil leaves, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons extra-virgin olive oil, plus more for brushing
  • 1 tablespoon balsamic vinegar
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Arrange the sliced baguette pieces in a single layer on the sheet.
  3. Lightly brush each slice of bread with olive oil.
  4. Toast the bread in the oven for about 5-7 minutes, or until golden and crispy. Once done, remove the baking sheet from the oven and set aside.
  5. In a large bowl, combine the diced tomatoes, mozzarella, and basil.
  6. Add the minced garlic, 2 tablespoons of olive oil, and balsamic vinegar to the mixture. Stir gently to combine.
  7. Season the topping with salt and freshly ground black pepper to taste.
  8. Allow the mixture to sit for about 10 minutes at room temperature.
  9. Generously spoon the tomato-mozzarella mixture onto each toasted baguette slice.
  10. Drizzle with extra olive oil if desired and enjoy!
