- 2 (15-ounce) containers of ricotta cheese
- 1 cup of granulated sugar
- 1 teaspoon of vanilla extract
- 4 large eggs (room temperature)
- 1 (15.25 ounce) box of chocolate or devil’s food cake mix
- 1/2 cup of canola or vegetable oil
- 1 cup of water
- 3 large eggs
- 1 (5-ounce) box of instant chocolate pudding mix
- 3 cups of cold milk
- 1 (8-ounce) container of whipped topping, thawed
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 baking dish with cooking spray.
- Create the Ricotta Layer: In a bowl, combine the ricotta cheese, sugar, vanilla extract, and 4 eggs. Mix until smooth and set aside.
- Prepare the Chocolate Cake Layer: In another bowl, mix the chocolate cake mix, canola oil, water, and 3 eggs until well combined.
- Layering: Pour half of the chocolate cake batter into the prepared dish. Gently spoon the ricotta mixture over it, then add the remaining chocolate batter on top of the ricotta layer.
- Bake: Place in the oven and bake for about 45-50 minutes, or until a toothpick comes out clean from the center.
- Make the Frosting: While the cake cools, prepare the chocolate pudding frosting. Whisk together the instant chocolate pudding mix and cold milk until it thickens. Spread it over the cooled cake and top with whipped topping.
- Chill: For the best flavor, refrigerate the cake for at least an hour before serving.
Notes
For longer preservation, consider freezing individual slices. Thaw overnight in the refrigerator before serving.
