Delicious, hand-held Italian Sub Roll-Ups packed with savory meats and cheeses, wrapped in lettuce for a grain-free, carb-light meal.
Ingredients

- 4 slices of Genoa Salami
- 4 slices of Mortadella
- 4 slices of Sopressata
- 4 slices of Pepperoni
- 4 slices of Provolone (optional for dairy-free)
- Paleo Lime Mayo or your favorite mayo
- Shredded Lettuce
- Optional extra toppings: banana peppers, jalapeño peppers, roasted red peppers, black olives
- Avocado Oil or Olive Oil
- Apple Cider Vinegar
- Italian Seasoning
- Toothpicks
Instructions
- Begin by layering the meat slices from largest to smallest on a flat surface.
- Spread a thin layer of mayo across the stacked meats, leaving some space at the top.
- Place a slice of provolone about halfway down from the top, and add shredded lettuce on the lower half.
- If desired, sprinkle your chosen toppings over the lettuce.
- Have toothpicks ready. Start rolling the stack from the bottom of the cheese, tucking in any fillings.
- When you reach the end, secure the outer edges with a toothpick.
- For a dipping sauce, mix 2 parts oil and 1 part apple cider vinegar; sprinkle with Italian seasoning and serve.
Notes
Wrap each roll-up individually in plastic wrap for storage; they will stay good for up to a week.
