Description

Delicious, hand-held Italian Sub Roll-Ups packed with savory meats and cheeses, wrapped in lettuce for a grain-free, carb-light meal.


Ingredients

Scale
  • 4 slices of Genoa Salami
  • 4 slices of Mortadella
  • 4 slices of Sopressata
  • 4 slices of Pepperoni
  • 4 slices of Provolone (optional for dairy-free)
  • Paleo Lime Mayo or your favorite mayo
  • Shredded Lettuce
  • Optional extra toppings: banana peppers, jalapeño peppers, roasted red peppers, black olives
  • Avocado Oil or Olive Oil
  • Apple Cider Vinegar
  • Italian Seasoning
  • Toothpicks

Instructions

  1. Begin by layering the meat slices from largest to smallest on a flat surface.
  2. Spread a thin layer of mayo across the stacked meats, leaving some space at the top.
  3. Place a slice of provolone about halfway down from the top, and add shredded lettuce on the lower half.
  4. If desired, sprinkle your chosen toppings over the lettuce.
  5. Have toothpicks ready. Start rolling the stack from the bottom of the cheese, tucking in any fillings.
  6. When you reach the end, secure the outer edges with a toothpick.
  7. For a dipping sauce, mix 2 parts oil and 1 part apple cider vinegar; sprinkle with Italian seasoning and serve.

Notes

Wrap each roll-up individually in plastic wrap for storage; they will stay good for up to a week.
