Ingredients

  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup small pasta (like acini di pepe or orzo)
  • 1 cup cooked meatballs (store-bought or homemade)
  • 1 cup fresh spinach or kale
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion, diced carrots, and diced celery. Cook these until softened, about 5-7 minutes.
  3. Stir in the minced garlic and cook for another minute.
  4. Pour in the chicken broth and bring the mixture to a boil.
  5. Add the pasta and meatballs, reduce the heat, and let it simmer until the pasta is tender, roughly 10 minutes.
  6. Stir in the spinach or kale and cook until it’s wilted.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with grated Parmesan cheese.
