Ingredients

- 1 small onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 6 cups chicken broth
- 1 cup small pasta (like acini di pepe or orzo)
- 1 cup cooked meatballs (store-bought or homemade)
- 1 cup fresh spinach or kale
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion, diced carrots, and diced celery. Cook these until softened, about 5-7 minutes.
- Stir in the minced garlic and cook for another minute.
- Pour in the chicken broth and bring the mixture to a boil.
- Add the pasta and meatballs, reduce the heat, and let it simmer until the pasta is tender, roughly 10 minutes.
- Stir in the spinach or kale and cook until it’s wilted.
- Season with salt and pepper to taste.
- Serve hot, garnished with grated Parmesan cheese.
Notes
Feel free to substitute the meatballs with your favorite protein, or use a mix of different greens based on what you have on hand.
