Description

Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 4 cups water
  • 1 package Japanese curry mix
  • Cooked rice for serving
  • Optional: green peas, bell peppers, or other vegetables

Instructions

  1. Heat vegetable oil in a pot over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Stir in sliced carrots and diced potatoes; cook for a few minutes.
  4. Pour in water and bring to a boil.
  5. Lower heat and add the curry mix, stirring until dissolved.
  6. Simmer until vegetables are tender.
  7. Serve the curry over cooked rice.

Notes

Serve with pickled vegetables for an added crunch and flavor.
