 - 1 package Japanese curry mix
 - Cooked rice for serving
 - Optional: green peas, bell peppers, or other vegetables
 
Instructions
- Heat vegetable oil in a pot over medium heat.
 - Add chopped onion and sauté until translucent.
 - Stir in sliced carrots and diced potatoes; cook for a few minutes.
 - Pour in water and bring to a boil.
 - Lower heat and add the curry mix, stirring until dissolved.
 - Simmer until vegetables are tender.
 - Serve the curry over cooked rice.
