Ingredients

- 2 large cucumbers
- 1 cup cherry tomatoes
- 8 oz fresh mozzarella balls (bocconcini)
- Fresh basil leaves, roughly a handful
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper, to taste
Instructions
- Slice the cucumbers into rounds.
- Halve the cherry tomatoes.
- Combine cucumber slices, cherry tomatoes, and mozzarella in a large bowl.
- Tear the basil leaves and toss them in.
- Drizzle with olive oil and balsamic vinegar.
- Season with salt and pepper.
- Gently combine and serve.
