  • Total Time: 255 minutes
  • Yield: 6 servings 1x
  • Diet: None

Description

A delightful dish that transforms a simple chuck roast into something extraordinary with tender meat simmering in rich broth and caramelized onions.

Ingredients

Scale
  • 34 pounds chuck roast
  • 2 large onions, sliced
  • 1 cup beef broth
  • 1 packet onion soup mix
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh thyme or parsley for optional garnish

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a large oven-safe pot, heat olive oil over medium-high heat and brown the seasoned chuck roast for about 3-4 minutes on each side.
  3. Remove the roast and sauté the sliced onions in the same pot until softened.
  4. Add the beef broth and onion soup mix, stirring until well-mixed.
  5. Return the roast to the pot, covering it with onions and broth, and cover the pot with a lid.
  6. Bake in the oven for 3-4 hours until fork-tender.
  7. Let it rest for a few minutes before slicing and serving.

Notes

Searing the roast enhances flavor, and consider using homemade beef broth for richness. Pair with creamy mashed potatoes or crusty bread.
