- 2 large onions, sliced
- 1 cup beef broth
- 1 packet onion soup mix
- 2 tablespoons olive oil

Instructions
- Preheat the oven to 300°F (150°C).
- In a large oven-safe pot, heat olive oil over medium-high heat and brown the seasoned chuck roast for about 3-4 minutes on each side.
- Remove the roast and sauté the sliced onions in the same pot until softened.
- Add the beef broth and onion soup mix, stirring until well-mixed.
- Return the roast to the pot, covering it with onions and broth, and cover the pot with a lid.
- Bake in the oven for 3-4 hours until fork-tender.
- Let it rest for a few minutes before slicing and serving.
