Description

A light and airy cake that combines the deliciousness of mousse and juicy pineapple, perfect for any occasion.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 3 large eggs
  • 1 tsp baking powder
  • ½ cup milk
  • 1 cup crushed pineapple (drained)
  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 1 cup fresh pineapple puree
  • 2 tsp gelatin

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter and granulated sugar. Add eggs one at a time and mix until well combined.
  3. In a separate bowl, whisk together flour and baking powder. Gradually add to the creamed mixture, alternating with milk.
  4. Stir in crushed pineapple until evenly distributed.
  5. Pour batter into a greased 9-inch round cake pan and bake for 25-30 minutes or until a toothpick comes out clean. Allow cooling.
  6. In another bowl, beat heavy cream with powdered sugar until soft peaks form. Gently fold in pineapple puree. Dissolve gelatin in warm water and add.
  7. Once cake is cooled, cut it in half horizontally. Spread mousse between layers and on top of the cake.
  8. Refrigerate for at least 2 hours before serving.

Notes

For a healthier alternative, substitute all-purpose flour with gluten-free blend and sugar with coconut sugar. Top with fresh fruit or whipped cream for serving.
