A light and airy cake that combines the deliciousness of mousse and juicy pineapple, perfect for any occasion.

			- 1 ½ cups all-purpose flour
 - 1 cup granulated sugar
 - ½ cup unsalted butter, softened
 - 3 large eggs
 - 1 tsp baking powder
 - ½ cup milk
 - 1 cup crushed pineapple (drained)
 - 1 cup heavy cream
 - ½ cup powdered sugar
 - 1 cup fresh pineapple puree
 - 2 tsp gelatin
 
Instructions
- Preheat the oven to 350°F (175°C).
 - In a mixing bowl, cream together softened butter and granulated sugar. Add eggs one at a time and mix until well combined.
 - In a separate bowl, whisk together flour and baking powder. Gradually add to the creamed mixture, alternating with milk.
 - Stir in crushed pineapple until evenly distributed.
 - Pour batter into a greased 9-inch round cake pan and bake for 25-30 minutes or until a toothpick comes out clean. Allow cooling.
 - In another bowl, beat heavy cream with powdered sugar until soft peaks form. Gently fold in pineapple puree. Dissolve gelatin in warm water and add.
 - Once cake is cooled, cut it in half horizontally. Spread mousse between layers and on top of the cake.
 - Refrigerate for at least 2 hours before serving.
 
Notes
For a healthier alternative, substitute all-purpose flour with gluten-free blend and sugar with coconut sugar. Top with fresh fruit or whipped cream for serving.
