A low-carb, crispy, and flavorful taquito filled with chicken, bacon, and ranch dressing.
Ingredients

- 2 cups cooked shredded chicken
- 6 slices cooked bacon, chopped
- 1/2 cup ranch dressing (sugar-free)
- 1/2 cup shredded cheddar cheese
- 1/4 cup green onions, chopped
- 8 low-carb tortillas
- Olive oil spray
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the cooked shredded chicken, chopped bacon, ranch dressing, cheddar cheese, and chopped green onions. Season with salt and pepper to taste.
- Take one low-carb tortilla and spoon in some of the chicken mixture in the center. Roll it tightly, ensuring the filling stays inside.
- Place each rolled taquito seam-side down on a baking sheet lined with parchment paper.
- Lightly spray the taquitos with olive oil spray.
- Bake in your preheated oven for 15-20 minutes, or until the taquitos are crispy and golden brown.
- Serve immediately with additional ranch dressing for dipping.
Notes
These taquitos can be prepared ahead of time and refrigerated before baking. Feel free to experiment with different dressings and additional fillings!
