- 1 lb ground chicken
- 3 large zucchinis, halved lengthwise and scooped
- 2 cups marinara or pasta sauce (no sugar added)
- 3 cups freshly shredded mozzarella cheese
- 1 cup shredded parmesan cheese
- Salt, pepper, and garlic powder to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the zucchinis in half lengthwise and scoop out the center to create boats. Lightly salt them and set aside.
- In a skillet over medium heat, cook the ground chicken. Season it with salt, pepper, and garlic powder until browned.
- Stir in the marinara sauce and let it simmer for about 5 to 7 minutes.
- Arrange your zucchini boats in a baking dish and fill each boat with the chicken mixture.
- Top each filled boat with mozzarella cheese and sprinkle with parmesan.
- Bake for 20-25 minutes, or until the cheese is bubbly and golden brown. For extra crispiness, broil for an additional 2-3 minutes.
- Garnish with chopped parsley if desired, serve warm, and enjoy!
Notes
Store leftovers in an airtight container for up to 4 days. Can be frozen before baking for up to 3 months. Reheat in the oven at 350°F until heated through.
