Description

Delicious zucchini boats filled with a flavorful mixture of ground chicken, marinara sauce, and melted cheese, perfect for a healthy, low-carb meal.


Ingredients

  • 1 lb ground chicken
  • 3 large zucchinis, halved lengthwise and scooped
  • 2 cups marinara or pasta sauce (no sugar added)
  • 3 cups freshly shredded mozzarella cheese
  • 1 cup shredded parmesan cheese
  • Salt, pepper, and garlic powder to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis in half lengthwise and scoop out the center to create boats. Lightly salt them and set aside.
  3. In a skillet over medium heat, cook the ground chicken. Season it with salt, pepper, and garlic powder until browned.
  4. Stir in the marinara sauce and let it simmer for about 5 to 7 minutes.
  5. Arrange your zucchini boats in a baking dish and fill each boat with the chicken mixture.
  6. Top each filled boat with mozzarella cheese and sprinkle with parmesan.
  7. Bake for 20-25 minutes, or until the cheese is bubbly and golden brown. For extra crispiness, broil for an additional 2-3 minutes.
  8. Garnish with chopped parsley if desired, serve warm, and enjoy!
