Instructions

  1. In a large pot, cook the chopped bacon over medium heat until crispy.
  2. Remove the bacon and set it aside, leaving the drippings in the pot.
  3. Add the shredded chicken to the pot, stirring to coat with bacon drippings.
  4. Mix in cream cheese, chicken broth, ranch seasoning mix, and shredded cheddar cheese.
  5. Stir continuously until the cream cheese is fully melted and blended.
  6. Allow the mixture to simmer on low for about 15-20 minutes, stirring occasionally.
  7. Season with salt and pepper to taste.
  8. Serve hot, topped with crispy bacon and chopped green onions.

Notes

For quicker prep, use rotisserie chicken or turkey bacon. This soup is ideal for freezing; thaw overnight before reheating.
