Instructions
- In a large pot, cook the chopped bacon over medium heat until crispy.
- Remove the bacon and set it aside, leaving the drippings in the pot.
- Add the shredded chicken to the pot, stirring to coat with bacon drippings.
- Mix in cream cheese, chicken broth, ranch seasoning mix, and shredded cheddar cheese.
- Stir continuously until the cream cheese is fully melted and blended.
- Allow the mixture to simmer on low for about 15-20 minutes, stirring occasionally.
- Season with salt and pepper to taste.
- Serve hot, topped with crispy bacon and chopped green onions.
Notes
For quicker prep, use rotisserie chicken or turkey bacon. This soup is ideal for freezing; thaw overnight before reheating.
