- 1 cup almond flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Optional: 1/2 cup sugar-free chocolate chips or chopped nuts
Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
- In a mixing bowl, combine the softened cream cheese and erythritol. Beat until smooth.
- Add the egg and vanilla extract, continuing to mix until well combined.
- In a separate bowl, whisk together the almond flour, baking powder, and salt.
- Gradually add the dry ingredients into the cream cheese mixture, blending thoroughly.
- If using, fold in the sugar-free chocolate chips or nuts.
- Scoop spoonfuls of the dough onto the prepared baking sheet, spacing them out to allow for spreading.
- Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
