A low-carb casserole combining chicken, mushrooms, garlic, and creamy cheese for a comforting meal.
Ingredients

			- 2 cups cooked chicken, shredded
 - 1 cup mushrooms, sliced
 - 3 cloves garlic, minced
 - 1 cup heavy cream
 - 1 cup shredded cheese (mozzarella or cheddar)
 - 1 tablespoon olive oil
 - Salt and pepper to taste
 - Fresh parsley for garnish (optional)
 
Instructions
- Preheat your oven to 350°F (175°C).
 - In a skillet, heat the olive oil over medium heat. Add minced garlic and sliced mushrooms, cooking until tender and golden.
 - In a mixing bowl, combine the cooked chicken, sautéed garlic and mushrooms, heavy cream, and half of the cheese. Season with salt and pepper.
 - Pour the chicken mixture into a baking dish, spreading it evenly. Sprinkle the remaining shredded cheese on top.
 - Bake for 25-30 minutes, or until bubbly and golden brown.
 - Remove from the oven and garnish with fresh parsley before serving.
 
Notes
Pairs well with a side salad or riced cauliflower. Leftovers can be refrigerated or frozen for future meals.
