Description

A low-carb casserole combining chicken, mushrooms, garlic, and creamy cheese for a comforting meal.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat the olive oil over medium heat. Add minced garlic and sliced mushrooms, cooking until tender and golden.
  3. In a mixing bowl, combine the cooked chicken, sautéed garlic and mushrooms, heavy cream, and half of the cheese. Season with salt and pepper.
  4. Pour the chicken mixture into a baking dish, spreading it evenly. Sprinkle the remaining shredded cheese on top.
  5. Bake for 25-30 minutes, or until bubbly and golden brown.
  6. Remove from the oven and garnish with fresh parsley before serving.

Notes

Pairs well with a side salad or riced cauliflower. Leftovers can be refrigerated or frozen for future meals.
