A warm, comforting casserole featuring shredded chicken, savory mushrooms, zesty garlic, and creamy cheeses, perfect for a keto-friendly meal.


Ingredients

  • 4 cups cooked chicken, shredded
  • 2 cups mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 cup cream cheese
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or mozzarella)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sliced mushrooms. Cook until the mushrooms are tender and fragrant.
  3. In a large bowl, mix together the shredded cooked chicken, sautéed mushrooms and garlic, cream cheese, heavy cream, half of the shredded cheese, and season with salt and pepper.
  4. Pour the mixture into a casserole dish and top it with the remaining shredded cheese.
  5. Place in the oven and bake for 25-30 minutes, or until the casserole is bubbly and golden brown.
  6. Once out of the oven, sprinkle fresh parsley on top before serving.

Notes

For a dairy-free version, substitute coconut cream and dairy-free cheese. You can prep this a day in advance and keep it refrigerated before baking.
