- 4 cups cooked chicken, shredded
- 2 cups mushrooms, sliced
- 4 cloves garlic, minced
- 1 cup cream cheese
- 1 cup heavy cream
- 1 cup shredded cheese (cheddar or mozzarella)
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh parsley for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat. Add minced garlic and sliced mushrooms. Cook until the mushrooms are tender and fragrant.
- In a large bowl, mix together the shredded cooked chicken, sautéed mushrooms and garlic, cream cheese, heavy cream, half of the shredded cheese, and season with salt and pepper.
- Pour the mixture into a casserole dish and top it with the remaining shredded cheese.
- Place in the oven and bake for 25-30 minutes, or until the casserole is bubbly and golden brown.
- Once out of the oven, sprinkle fresh parsley on top before serving.
Notes
For a dairy-free version, substitute coconut cream and dairy-free cheese. You can prep this a day in advance and keep it refrigerated before baking.
