- 2 cups cooked chicken, shredded
- 8 ounces mushrooms, sliced
- 1 cup heavy cream
- 4 cloves garlic, minced
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add sliced mushrooms and sauté until soft, about 5-7 minutes.
- Add minced garlic and cook for another minute until fragrant.
- In a large bowl, combine shredded chicken, sautéed mushrooms, heavy cream, half of the cheese, salt, and pepper. Mix well.
- Transfer the mixture into a greased casserole dish. Top with the remaining cheese.
- Bake in the preheated oven for 25-30 minutes, until the cheese is bubbly and golden brown.
- Garnish with fresh parsley, if desired, and serve.
Notes
Can be made ahead of time and stored in the refrigerator or freezer. Consider adding low-carb vegetables for extra nutrition.
