Ingredients

  • 2 cups cooked chicken, shredded
  • 8 ounces mushrooms, sliced
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add sliced mushrooms and sauté until soft, about 5-7 minutes.
  3. Add minced garlic and cook for another minute until fragrant.
  4. In a large bowl, combine shredded chicken, sautéed mushrooms, heavy cream, half of the cheese, salt, and pepper. Mix well.
  5. Transfer the mixture into a greased casserole dish. Top with the remaining cheese.
  6. Bake in the preheated oven for 25-30 minutes, until the cheese is bubbly and golden brown.
  7. Garnish with fresh parsley, if desired, and serve.

Notes

Can be made ahead of time and stored in the refrigerator or freezer. Consider adding low-carb vegetables for extra nutrition.
