- 1/4 cup unsweetened cocoa powder
- 1/4 cup butter, melted
- 1/4 cup erythritol or your preferred keto sweetener
- 8 oz cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup erythritol or your choice of keto sweetener (for filling)
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup sugar-free chocolate chips or crushed keto-friendly Oreo cookies for topping
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the almond flour, cocoa powder, melted butter, and erythritol. Mix until well combined.
- Press this mixture firmly into the bottom of a greased 8×8 inch baking dish to create your crust.
- Bake the crust for about 10 minutes, then remove it from the oven and set aside to cool.
- In another bowl, blend together the softened cream cheese, sour cream, and erythritol until you achieve a smooth consistency.
- Add the eggs, one at a time, ensuring to mix well after each addition. Stir in the vanilla extract.
- Pour the cheesecake filling over the cooled crust and spread it evenly.
- Bake for another 25-30 minutes, or until the center is set but still has a slight jiggle.
- Once baked, remove from the oven and allow the bars to cool down.
- Refrigerate for at least 4 hours or overnight before slicing. For a finishing touch, top with sugar-free chocolate chips or crushed keto Oreo cookies.
