Ingredients

  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 cup Monterey Jack cheese, shredded
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Lettuce leaves (for wrapping, butter or romaine works)
  • Olive oil (for cooking)

Instructions

  1. Heat a drizzle of olive oil in a skillet over medium heat.
  2. Add the sliced onions and bell peppers, sautéing until they soften (about 5-7 minutes).
  3. Push the sautéed vegetables to one side of the skillet and add the ground meat. Cook until browned, seasoning with garlic powder, salt, and pepper.
  4. Once the meat is fully browned, combine it with the veggies and sprinkle in the shredded cheese. Stir until it melts and becomes gooey.
