- 2 cups fresh strawberries, hulled and sliced
- 8 oz cream cheese, softened
- 1/4 cup erythritol or another sweetener
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup almond flour
- 1 tsp baking powder
- 1/4 tsp salt
- 2 tbsp melted butter
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish.
- Beat the softened cream cheese with erythritol until smooth and creamy.
- Add the eggs and vanilla extract, mixing until combined.
- Combine almond flour, baking powder, and salt in another bowl.
- Gradually add the dry mixture to the cream cheese mixture, blending until smooth.
- Pour the batter into the prepared baking dish, spreading it evenly.
- Spread the sliced strawberries over the batter.
- Drizzle melted butter over the strawberries.
- Bake for 30-35 minutes, or until set and golden on top.
- Let cool slightly before serving.
