			- 4 large bell peppers (any color)
 - 1 pound ground beef
 - 1 cup shredded cheese (cheddar or mozzarella)
 - 1 small onion, diced
 - 2 cloves garlic, minced
 - 1 teaspoon paprika
 - 1 teaspoon Italian seasoning
 - Salt and pepper to taste
 - Fresh herbs for topping (optional)
 
Instructions
- Preheat the oven to 375°F (190°C).
 - Cut off the tops of the bell peppers and remove the seeds.
 - In a skillet, sauté the diced onion and minced garlic until they turn translucent.
 - Add the ground beef to the skillet and cook until it’s nicely browned.
 - Stir in the paprika, Italian seasoning, salt, and pepper, mixing well.
 - Remove the skillet from heat and mix in half of the shredded cheese.
 - Stuff each bell pepper with the beef mixture and place them in a baking dish.
 - Top each stuffed pepper with the remaining cheese.
 - Bake for 25-30 minutes or until the peppers are tender.
 - Garnish with fresh herbs if desired and enjoy!
 
Notes
Serve with a salad or cauliflower rice for a complete meal. Leftovers can be stored in an airtight container for up to 4 days in the fridge or up to 3 months in the freezer.
