Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 pound baby potatoes, halved
  • Fresh parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Whisk together the balsamic vinegar, lemon juice, olive oil, minced garlic, oregano, salt, and pepper in a small bowl.
  3. Place the chicken breasts on a sheet pan and pour half of the marinade over them.
  4. Add the halved baby potatoes to the same pan, drizzle the remaining marinade over them, and toss to coat.
  5. Bake for 20-25 minutes, until the chicken is cooked through and the potatoes are tender.
  6. Garnish with fresh parsley before serving.

Notes

For extra flavor, consider marinating the chicken for up to two hours before cooking. Optionally, use chicken thighs or sweet potatoes for variation.
