Ingredients

  • 1/2 cup blueberries (fresh or frozen)

  • 2 tablespoons honey or maple syrup
  • 1/4 cup rolled oats
  • 1/4 cup chopped nuts (optional for added crunch)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Combine the cottage cheese, blueberries, lemon juice, honey (or maple syrup), vanilla extract, and a pinch of salt in a mixing bowl.
  2. Stir in the rolled oats and nuts, if using.
  3. Form the mixture into small, bite-sized balls using your hands.
  4. Line a baking sheet with parchment paper and place the bites on it.
  5. Refrigerate the bites for at least 30 minutes to allow them to firm up.
