Ingredients

- 1 cup cottage cheese
- 1/2 cup blueberries (fresh or frozen)
- 1/4 cup lemon juice
- 2 tablespoons honey or maple syrup
- 1/4 cup rolled oats
- 1/4 cup chopped nuts (optional for added crunch)
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- Combine the cottage cheese, blueberries, lemon juice, honey (or maple syrup), vanilla extract, and a pinch of salt in a mixing bowl.
- Stir in the rolled oats and nuts, if using.
- Form the mixture into small, bite-sized balls using your hands.
- Line a baking sheet with parchment paper and place the bites on it.
- Refrigerate the bites for at least 30 minutes to allow them to firm up.
