- 1/4 cup chia seeds
- 1 cup oat milk
- Zest of 1 lemon
- 2 tablespoons maple syrup
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- 1 cup raw cashews (soaked and drained)
- 1/2 cup oat milk (for the lemon cream layer)
- 2 tablespoons maple syrup (for the cream layer)
- 2 tablespoons lemon juice
- 1/4 teaspoon turmeric
- 1/2 teaspoon lemon extract
Instructions
- In a mixing bowl, combine chia seeds, 1 cup of oat milk, lemon zest, maple syrup, vanilla extract, and sea salt. Whisk together for about a minute until all is evenly mixed.
- Place the chia mixture in the fridge to set for about 3 hours (or overnight for more flavor infusion).
- Meanwhile, ensure your cashews have soaked for at least an hour in boiling water. Drain them.
- In a blender, combine soaked cashews, 1/2 cup oat milk, 2 tablespoons maple syrup, lemon juice, turmeric, and lemon extract. Blend until smooth and creamy.
- Once the chia pudding has set, split it evenly into four small jars or bowls.
- Pour the lemon cream mixture over the top of the chia pudding.
- Return the jars to the fridge and let them set for an additional 3 hours before serving.
- Top with fresh fruit if desired, and enjoy!
Notes
Store in airtight containers in the refrigerator for up to five days. Customize with different fruits or add cocoa for a chocolate twist.
