Ingredients

  • 1/4 cup chia seeds
  • 1 cup oat milk
  • Zest of 1 lemon
  • 2 tablespoons maple syrup
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1 cup raw cashews (soaked and drained)
  • 1/2 cup oat milk (for the lemon cream layer)
  • 2 tablespoons maple syrup (for the cream layer)
  • 2 tablespoons lemon juice
  • 1/4 teaspoon turmeric
  • 1/2 teaspoon lemon extract

Instructions

  1. In a mixing bowl, combine chia seeds, 1 cup of oat milk, lemon zest, maple syrup, vanilla extract, and sea salt. Whisk together for about a minute until all is evenly mixed.
  2. Place the chia mixture in the fridge to set for about 3 hours (or overnight for more flavor infusion).
  3. Meanwhile, ensure your cashews have soaked for at least an hour in boiling water. Drain them.
  4. In a blender, combine soaked cashews, 1/2 cup oat milk, 2 tablespoons maple syrup, lemon juice, turmeric, and lemon extract. Blend until smooth and creamy.
  5. Once the chia pudding has set, split it evenly into four small jars or bowls.
  6. Pour the lemon cream mixture over the top of the chia pudding.
  7. Return the jars to the fridge and let them set for an additional 3 hours before serving.
  8. Top with fresh fruit if desired, and enjoy!

Notes

Store in airtight containers in the refrigerator for up to five days. Customize with different fruits or add cocoa for a chocolate twist.
