Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch square baking pan.
  2. Mix the flour, powdered sugar, and salt. Cut in the softened butter until the mixture resembles coarse crumbs.
  3. Press this crumb mixture evenly into the bottom of your prepared pan.
  4. Whisk together the granulated sugar, eggs, freshly squeezed lemon juice, lemon zest, and baking powder. Pour this mixture over the crust.
  5. Bake for 20-25 minutes or until the filling is set and the edges turn lightly golden.
  6. Let it cool completely, then dust with powdered sugar before slicing into bars.
