Ingredients

  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 2 teaspoons dried oregano
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 4 (6-ounce) boneless, skinless chicken breasts
  • 1 ½ pounds yellow potatoes, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt (plus more to taste)
  • 1 teaspoon black pepper (plus more to taste)
  • 4 small zucchinis, sliced into 1-inch pieces

Instructions

  1. Prepare the Marinade: In a large bowl, combine lemon juice, olive oil, minced garlic, oregano, paprika, salt, and black pepper. Stir well.
  2. Marinate the Chicken: Add chicken breasts to the marinade, coating them thoroughly. Let them marinate for 20 minutes to 24 hours, if possible.
  3. Roast the Potatoes: Preheat your oven to 400°F (200°C). Spread potato pieces on a parchment-lined baking sheet. Drizzle with olive oil, then sprinkle with garlic powder, salt, and pepper. Toss to coat and roast for 30 minutes, stirring halfway through.
  4. Cook the Chicken: Heat a skillet over medium-high heat. Remove the chicken from the marinade (discard any excess) and cook for 7-8 minutes per side, or until a meat thermometer reads 165°F (74°C). Let it rest for 5 minutes before slicing.
  5. Sauté the Zucchini: Toss zucchini slices in the remaining marinade. In the same skillet used for the chicken, cook the zucchini on high for 5-7 minutes, stirring occasionally until softened. Season to taste.
  6. Assemble Meal Prep Containers: Divide the sliced chicken, roasted potatoes, and sautéed zucchini among four meal prep containers. Allow to cool before sealing for storage.

Store in airtight containers in the fridge for up to 4 days. For longer storage, freeze portions in airtight containers for up to 3 months.
