- Prepare the Marinade: In a bowl, mix together fresh lemon juice, olive oil, minced garlic, oregano, paprika, salt, and pepper. Add the chicken, ensuring each piece is well-coated. Let it marinate for at least 30 minutes.
- Prepare the Potatoes: Preheat your oven to 425°F (220°C). In a bowl, toss the yellow potatoes with olive oil, garlic powder, salt, and pepper. Spread them out on a baking sheet in a single layer.
- Cook the Chicken: Place the marinated chicken on a preheated grill or skillet over medium-high heat. Cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
- Cook the Zucchini: While the chicken is cooking, add the zucchini to the skillet (or grill) and sauté for about 5 minutes until tender but still crisp.
- Assemble Meal Prep Containers: Once everything is cooked, divide the chicken, potatoes, and zucchini into meal prep containers. You can refrigerate these for up to 5 days.
