Delicious, no-bake energy bites packed with zesty lemon and nutty poppy seeds for a quick, nutritious snack.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup almond butter or peanut butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup lemon juice (fresh is best)
  • 1 tablespoon lemon zest
  • 2 tablespoons poppy seeds
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. In a mixing bowl, combine the rolled oats, almond butter, honey, lemon juice, lemon zest, poppy seeds, vanilla extract, and salt. Stir until everything blends smoothly.
  2. If the mixture feels too sticky, add more oats until you reach a manageable consistency.
  3. Scoop out tablespoon-sized portions and roll them into balls.
  4. Line a baking sheet with parchment paper and place the energy bites on it.
  5. Refrigerate for at least 30 minutes to firm up.
  6. Transfer to an airtight container and store in the fridge for up to a week.

Notes

Experiment with rolling the energy bites in shredded coconut or crushed nuts for added texture.
