Ingredients

- 1 cup rolled oats
- 1/2 cup almond butter or peanut butter
- 1/4 cup honey or maple syrup
- 1/4 cup lemon juice (fresh is best)
- 1 tablespoon lemon zest
- 2 tablespoons poppy seeds
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- In a mixing bowl, combine the rolled oats, almond butter, honey, lemon juice, lemon zest, poppy seeds, vanilla extract, and salt. Stir until everything blends smoothly.
- If the mixture feels too sticky, add more oats until you reach a manageable consistency.
- Scoop out tablespoon-sized portions and roll them into balls.
- Line a baking sheet with parchment paper and place the energy bites on it.
- Refrigerate for at least 30 minutes to firm up.
- Transfer to an airtight container and store in the fridge for up to a week.
Notes
Experiment with rolling the energy bites in shredded coconut or crushed nuts for added texture.
