Instructions
- In a mixing bowl, combine rolled oats, almond butter, maple syrup, lemon juice, lemon zest, poppy seeds, vanilla extract, and a pinch of salt.
- Mix everything together until all ingredients are well combined.
- Use your hands to form the mixture into small balls, about the size of a tablespoon.
- Place the energy bites on a parchment-lined baking tray.
- Refrigerate them for at least 30 minutes to allow them to firm up.
