Description
A comforting, creamy loaded potato soup that’s perfect for chilly evenings and family gatherings.
Ingredients
Scale
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 6 slices bacon, cooked and crumbled
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a large pot, combine the diced potatoes, chopped onion, and broth. Bring to a boil, then reduce to a simmer. Cook until the potatoes are tender, about 15-20 minutes.
- Once the potatoes are soft, use a potato masher or an immersion blender to puree the soup to your preferred consistency.
- Stir in heavy cream and shredded cheddar cheese, cooking until the cheese melts.
- Season generously with salt and pepper to taste.
- Serve hot, topped with crumbled bacon and a sprinkle of green onions.
Notes
Great options to elevate the dish include serving with crusty bread or a side salad. For storage, cool fully and keep in an airtight container for 3-4 days, or freeze without cream and cheese.
