Loaded Potato Soup

  • Total Time: 40 minutes
  • Yield: 4 servings 1x
  • Diet: None

Description

A comforting, creamy loaded potato soup that’s perfect for chilly evenings and family gatherings.

Ingredients

Scale
  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a large pot, combine the diced potatoes, chopped onion, and broth. Bring to a boil, then reduce to a simmer. Cook until the potatoes are tender, about 15-20 minutes.
  2. Once the potatoes are soft, use a potato masher or an immersion blender to puree the soup to your preferred consistency.
  3. Stir in heavy cream and shredded cheddar cheese, cooking until the cheese melts.
  4. Season generously with salt and pepper to taste.
  5. Serve hot, topped with crumbled bacon and a sprinkle of green onions.

Notes

Great options to elevate the dish include serving with crusty bread or a side salad. For storage, cool fully and keep in an airtight container for 3-4 days, or freeze without cream and cheese.
