Description

Ingredients

  • 2 large potatoes
  • 1 lb ground beef or turkey
  • 1 tablespoon taco seasoning
  • 1 cup corn
  • 1 cup black beans, rinsed and drained
  • 1 cup diced tomatoes
  • 1 cup diced bell peppers
  • 1 avocado, diced
  • 1/2 cup shredded cheese
  • Sour cream (for serving)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and cube the potatoes. Toss them with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes or until they’re crispy and golden.
  3. In a skillet, cook the ground meat over medium heat until it’s browned. Drain any excess fat, then stir in the taco seasoning until well combined.
  4. Combine the roasted potatoes, ground meat, corn, black beans, diced tomatoes, and bell peppers in a large bowl.
  5. Serve the mixture in bowls, topped with diced avocado and shredded cheese. Add sour cream if desired. Enjoy!

Notes

For a healthier twist, substitute ground beef or turkey with lentils or a meat alternative. Leftovers can be stored in an airtight container for 3-4 days in the fridge, or frozen for up to 2 months.
