- 2 large potatoes
- 1 lb ground beef or turkey
- 1 tablespoon taco seasoning
- 1 cup corn
- 1 cup black beans, rinsed and drained
- 1 cup diced tomatoes
- 1 cup diced bell peppers
- 1 avocado, diced
- 1/2 cup shredded cheese
- Sour cream (for serving)
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and cube the potatoes. Toss them with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes or until they’re crispy and golden.
- In a skillet, cook the ground meat over medium heat until it’s browned. Drain any excess fat, then stir in the taco seasoning until well combined.
- Combine the roasted potatoes, ground meat, corn, black beans, diced tomatoes, and bell peppers in a large bowl.
- Serve the mixture in bowls, topped with diced avocado and shredded cheese. Add sour cream if desired. Enjoy!
Notes
For a healthier twist, substitute ground beef or turkey with lentils or a meat alternative. Leftovers can be stored in an airtight container for 3-4 days in the fridge, or frozen for up to 2 months.
