- 4 large potatoes, diced (Russets or Yukon Gold work best)
- 1 pound ground meat (beef, chicken, or turkey)
- 1 tablespoon olive oil
- 1 teaspoon taco seasoning (store-bought or homemade)
- 1 cup cherry tomatoes, halved
- 1 cup corn (frozen, canned, or fresh)
- 1 avocado, diced
- 1 cup shredded cheese (cheddar or Mexican blend)
- Sour cream and salsa for serving
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the diced potatoes in olive oil and season with salt and pepper. Spread them evenly on a baking sheet.
- Roast the potatoes for 25-30 minutes. Check for crispiness!
- Brown the ground meat in a skillet over medium heat. Add taco seasoning and stir well. Cook until no pink remains.
- Combine the roasted potatoes, cooked meat, cherry tomatoes, corn, and avocado in a large mixing bowl.
- Dish out the mixture into bowls and top with shredded cheese, sour cream, salsa, and cilantro.
