  • 1 cup bread crumbs (panko recommended)
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a shallow dish, combine the bread crumbs, half of the Parmesan cheese, and seasonings (Italian seasoning, salt, and pepper).
  3. In another bowl, beat the eggs and milk together until well mixed.
  4. Place the flour in a third dish for dredging.
  5. Dredge each chicken breast first in the flour, ensuring it’s completely coated. Shake off any excess.
  6. Dip the chicken into the egg mixture, allowing any extra to drip off.
  7. Finally, coat the chicken with the breadcrumb mixture, pressing it gently to adhere.
  8. In a large skillet, heat olive oil over medium heat. Add the chicken and cook for about 3-4 minutes per side, until golden brown.
  9. Transfer the browned chicken to a baking dish.
  10. In a small bowl, mix the remaining Parmesan with mozzarella and minced garlic. Top each chicken piece with this cheesy mixture.
  11. Bake for 20-25 minutes, until the chicken is cooked through (internal temperature of 165°F) and the cheese is bubbly.

For extra juicy chicken, consider brining the breasts in a saltwater solution a few hours before cooking. Fresh herbs can enhance the flavor of the breadcrumb mixture.
