Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup bread crumbs
  • 1 cup grated Parmesan cheese (divided)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In one bowl, mix the breadcrumbs, half of the Parmesan, Italian seasoning, salt, and pepper.
  3. In a second bowl, beat together the eggs and milk.
  4. Place the flour in a separate dish for dredging.
  5. Dredge each chicken breast in flour, then dip in the egg mixture, and finally coat with the breadcrumb mixture.
  6. Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 3-4 minutes on each side until golden brown.
  7. Transfer the chicken to a baking dish. In another bowl, combine the remaining Parmesan, mozzarella, and minced garlic. Top the chicken with this mixture.
  8. Bake for 20-25 minutes until the chicken is cooked through and the cheese is bubbly and golden.

Notes

For a healthier option, consider whole-wheat breadcrumbs or different cheeses. Serve with steamed vegetables or a salad.
