- 4 boneless, skinless chicken breasts
- 1 cup bread crumbs
- 1 cup grated Parmesan cheese (divided)
- 1 cup shredded mozzarella cheese
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/4 cup milk
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In one bowl, mix the breadcrumbs, half of the Parmesan, Italian seasoning, salt, and pepper.
- In a second bowl, beat together the eggs and milk.
- Place the flour in a separate dish for dredging.
- Dredge each chicken breast in flour, then dip in the egg mixture, and finally coat with the breadcrumb mixture.
- Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 3-4 minutes on each side until golden brown.
- Transfer the chicken to a baking dish. In another bowl, combine the remaining Parmesan, mozzarella, and minced garlic. Top the chicken with this mixture.
- Bake for 20-25 minutes until the chicken is cooked through and the cheese is bubbly and golden.
Notes
For a healthier option, consider whole-wheat breadcrumbs or different cheeses. Serve with steamed vegetables or a salad.
