Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1 cup grated Parmesan cheese (divided)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a shallow dish, mix breadcrumbs, half of the Parmesan, Italian seasoning, salt, and pepper. In another dish, beat the eggs and milk, and place the flour in a third dish.
  3. Coat each chicken breast in flour, dip it into the egg mixture, and then cover it with the breadcrumb mixture.
  4. Heat olive oil in a skillet over medium heat. Add the chicken and cook for about 3-4 minutes per side until they’re golden brown.
  5. Place the seared chicken into a baking dish. In a bowl, mix the remaining Parmesan, mozzarella, and minced garlic, and top the chicken with this cheesy mixture. Bake for 20-25 minutes until the chicken is cooked through.

Notes

Feel free to substitute with gluten-free breadcrumbs or a dairy-free cheese if needed.
