Description

A hearty and comforting low-carb meal that captures the flavors of a classic bacon cheeseburger in a simple one-dish casserole.


Ingredients

  • 1 lb (450 g) ground beef
  • 6 slices bacon (cooked and crumbled)
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 4 large eggs
  • 1 cup (240 ml) heavy cream
  • 1 cup shredded cheddar cheese (divided)
  • 1 cup shredded mozzarella cheese (divided)
  • 2 tbsp cream cheese (softened)
  • 2 tbsp sugar-free ketchup (optional)
  • 1 tsp yellow mustard
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp salt (or to taste)
  • ¼ tsp black pepper
  • 2 tbsp chopped pickles (optional topping)
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the bacon over medium heat until crispy. Remove and crumble it, setting aside.
  2. Drain most of the bacon grease, leaving about 1 tablespoon. Add the ground beef, onion, and garlic to the skillet. Cook until the beef is browned and the onion has softened.
  3. Stir in the smoked paprika, garlic powder, salt, and black pepper to season the beef mixture.
  4. Lower the heat and mix in the softened cream cheese until melted and well incorporated. Add the crumbled bacon back into the skillet.
  5. Spread this mixture evenly into a greased 9×13-inch baking dish.
  6. Whisk together the eggs, heavy cream, mustard, and sugar-free ketchup (if using) in a separate bowl. Stir in half of both the cheddar and mozzarella cheeses.
  7. Pour the egg mixture over the meat layer in the baking dish. Top with the remaining cheeses.
  8. Place in a preheated oven at 350°F (175°C) for 25-30 minutes, until the center is set and the top is golden brown.
  9. Allow to cool slightly before slicing. Garnish with pickles or parsley if desired.

Notes

For extra flavor, add chopped jalapeños or crushed pork rinds on top before baking.
