- 1/2 small onion, finely diced
- 3 cups green cabbage, shredded
- 3 cloves garlic, minced
- 2 tablespoons soy sauce (or coconut aminos for a low-sodium version)
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon ground ginger
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 2 green onions, sliced (for garnish)
- 1 tablespoon toasted sesame seeds (optional, for garnish)
Instructions
- In a large skillet over medium-high heat, add the ground beef. Cook until browned, breaking it up into smaller pieces.
- Drain the excess fat from the skillet. Then, add the finely diced onion and cook until it becomes translucent.
- Stir in the minced garlic and ground ginger. Let them cook together until the garlic becomes fragrant.
- Toss in the shredded cabbage and cook until it’s tender but still retains a nice crunch.
- In a small bowl, mix the soy sauce, sesame oil, rice vinegar, and red pepper flakes. Pour this mixture over the beef and cabbage, stirring to combine.
- Garnish with sliced green onions and toasted sesame seeds before serving.
Notes
To keep the cabbage crunchy, avoid overcooking it. This dish can also be enjoyed over cauliflower rice or in lettuce wraps.
