This Low Carb Steak Fajita Bowl is a flavorful, satisfying meal designed for those on a keto diet, featuring marinated steak, cauliflower rice, and colorful veggies.


Ingredients

  • 1 1/4 lbs Beef flank steak or skirt steak
  • 3 tablespoons olive oil (for marinade)
  • 1 tablespoon olive oil (for cooking)
  • 1/3 cup lime juice (juice of 2 limes)
  • 4 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 3/4 teaspoon fine sea salt
  • 1/4 teaspoon smoked paprika
  • 1/4 cup fresh cilantro leaves, chopped
  • 2 tablespoons olive oil (for sautéing veggies)
  • 3 bell peppers (various colors), sliced
  • 1 large onion, sliced
  • 12 oz cauliflower rice (frozen or fresh)
  • Sea salt, to taste
  • Fresh lime juice (for serving)
  • Avocado or guacamole
  • Dairy-free sour cream
  • Fresh salsa

Instructions

  1. Whisk together 3 tablespoons of olive oil, lime juice, minced garlic, chili powder, cumin, salt, smoked paprika, and cilantro in a large bowl.
  2. Add the steak, ensuring it’s well coated. Cover and marinate for at least 2 hours or overnight.
  3. Remove the steak from the fridge 20 minutes before cooking. Pat dry and season with sea salt.
  4. Heat 1 tablespoon of olive oil in a cast iron skillet over high heat. Sear the steak for about 4 minutes per side for medium-rare.
  5. Transfer the steak to a plate, cover loosely with foil, and let it rest for about 10 minutes before slicing thinly against the grain.
  6. In the same skillet, add another tablespoon of oil and sauté the bell peppers and onions with a pinch of salt for 5-7 minutes until tender and slightly caramelized.
  7. In another pan, heat 1 tablespoon of oil and add the cauliflower rice. Sauté for about 5 minutes, seasoning with salt and fresh lime juice.
  8. Build your bowl starting with a base of cauliflower rice, then layer on the sliced steak, sautéed veggies, avocado, salsa, dairy-free sour cream, and fresh cilantro.

Notes

Serve with extra lime wedges for freshness, and consider a side salad or cucumber salad to balance the spices.
