  • 1 cup diced tomatoes
  • 1 cup cauliflower rice
  • ½ cup diced bell peppers
  • ½ cup diced onions
  • 1 cup shredded lettuce
  • Sour cream (for serving)
  • Sliced jalapeños (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brown the ground beef in a large skillet over medium heat. Drain any excess fat.
  3. Stir in the taco seasoning, then add the diced tomatoes, cauliflower rice, bell peppers, and onions. Cook until heated through, about 5-7 minutes.
  4. Transfer the beef mixture into a baking dish and sprinkle the shredded cheese on top.
  5. Bake for approximately 15-20 minutes, or until the cheese is melted and bubbly.
  6. Remove from the oven, let it cool slightly, and serve with shredded lettuce, sour cream, and jalapeños.
