- 1 lb ground beef (or ground turkey)
- 2 cups uncooked macaroni
- 2 cups shredded cheddar cheese
- 1/2 cup diced onion
- 1/2 cup breadcrumbs (Panko recommended)
- 1 large egg
- 1/4 cup milk (for the meatloaf)
- 2 tbsp butter (for the cheese sauce)
- 2 cups milk (for the cheese sauce)
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp paprika
- 1/2 tsp dry mustard
- 2 tbsp flour
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the ground beef, diced onion, breadcrumbs, egg, 1/4 cup milk, salt, and pepper. Mix well.
- Press the meat mixture into a greased baking dish and bake for 20 minutes.
- While the meatloaf is baking, cook the macaroni according to package instructions. Drain and set aside.
- In a saucepan over medium heat, melt the butter. Stir in the flour and cook for one minute, forming a roux.
- Gradually whisk in 2 cups of milk, cooking until thickened. Season with salt, pepper, paprika, and dry mustard.
- Once thickened, stir in the shredded cheddar cheese until melted and smooth.
- Combine the cooked macaroni with the cheese sauce and pour it over the meatloaf layer. Top with any remaining cheese.
- Bake for an additional 25 minutes or until bubbly and golden.
Notes
Serve hot with a fresh salad or steamed veggies. Leftovers can be stored in an airtight container for up to 3 days in the refrigerator.
