- 1 lb ground beef
- 2 cups uncooked macaroni
- 2 cups shredded cheddar cheese (plus some for topping)
- 1/2 cup diced onion
- 1/2 cup breadcrumbs
- 1 large egg
- 1/4 cup milk (for the meatloaf)
- 2 tbsp butter (for the cheese sauce)
- 2 cups milk (for the cheese sauce)
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp paprika
- 1/2 tsp dry mustard
- 2 tbsp flour
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the ground beef, diced onion, breadcrumbs, egg, milk, salt, and pepper. Mix well until all ingredients are fully incorporated.
- Press the beef mixture into a greased baking dish. Bake for 20 minutes.
- While baking, cook the macaroni according to the package directions. Drain and set aside.
- For the cheese sauce, melt butter in a saucepan over medium heat. Stir in flour and cook for about one minute.
- Gradually whisk in 2 cups of milk until the mixture thickens. Season it with salt, pepper, paprika, and dry mustard.
- Stir in the shredded cheese until melted and creamy.
- Combine the cooked macaroni with the cheese sauce, then pour this mixture over the meatloaf layer in the baking dish. Top it off with any remaining cheese.
- Bake for an additional 25 minutes, or until the casserole is bubbly and golden.
Notes
For extra flavor, consider adding sautéed veggies like bell peppers or spinach. You can also mix in a variety of cheeses for a richer taste.
