- 1 (21 oz) can lemon pie filling
Instructions
- Preheat your oven to 350°F (175°C).
- Place the unsalted butter in a 9×9-inch baking dish and melt it in the oven for about 3-4 minutes.
- In a mixing bowl, whisk together the flour, baking powder, salt, and sugar until well combined.
- Stir in the buttermilk, vanilla extract, and lemon extract until just mixed.
- Pour the batter over the melted butter without stirring.
- Spoon dollops of lemon pie filling evenly over the top of the batter.
- Bake for 45-55 minutes until golden brown around the edges.
- Allow the cobbler to cool slightly before serving warm.
