Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Place the unsalted butter in a 9×9-inch baking dish and melt it in the oven for about 3-4 minutes.
  3. In a mixing bowl, whisk together the flour, baking powder, salt, and sugar until well combined.
  4. Stir in the buttermilk, vanilla extract, and lemon extract until just mixed.
  5. Pour the batter over the melted butter without stirring.
  6. Spoon dollops of lemon pie filling evenly over the top of the batter.
  7. Bake for 45-55 minutes until golden brown around the edges.
  8. Allow the cobbler to cool slightly before serving warm.
