Description
A delightful combination of sweet maple syrup and savory bacon wrapped around tender roasted carrots, perfect for any gathering.
Ingredients

- 2 pounds carrots (peeled and cut to less than ½ inch thick)
- 1 pound thin-sliced bacon
- ¼ cup maple syrup
Instructions
- Preheat your oven to 400°F.
- Carefully wrap one slice of bacon around each carrot, starting from the thick end and making sure not to overlap the layers of bacon.
- Arrange the bacon-wrapped carrots on a wire rack placed over a baking sheet for even cooking.
- Bake for about 25 minutes until the bacon is crispy and the carrots are tender.
- Remove them from the oven and brush all sides with maple syrup.
- Return to the oven and bake for an additional 8-10 minutes for that perfect glaze.
- Serve warm and watch them disappear!
Notes
For a vegan version, substitute bacon with tempeh bacon and use agave syrup instead of maple syrup.
