Maple Bacon Carrots

Description

A delightful combination of sweet maple syrup and savory bacon wrapped around tender roasted carrots, perfect for any gathering.


Ingredients

  • 2 pounds carrots (peeled and cut to less than ½ inch thick)
  • 1 pound thin-sliced bacon
  • ¼ cup maple syrup

Instructions

  1. Preheat your oven to 400°F.
  2. Carefully wrap one slice of bacon around each carrot, starting from the thick end and making sure not to overlap the layers of bacon.
  3. Arrange the bacon-wrapped carrots on a wire rack placed over a baking sheet for even cooking.
  4. Bake for about 25 minutes until the bacon is crispy and the carrots are tender.
  5. Remove them from the oven and brush all sides with maple syrup.
  6. Return to the oven and bake for an additional 8-10 minutes for that perfect glaze.
  7. Serve warm and watch them disappear!

Notes

For a vegan version, substitute bacon with tempeh bacon and use agave syrup instead of maple syrup.
