- 1.5 lbs fresh Brussels sprouts, trimmed and halved
- 6 slices thick-cut bacon, chopped
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1/4 cup pure maple syrup
- 1.5 tablespoons bourbon
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon garlic powder
- Optional: Red pepper flakes for subtle heat
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper until fully coated.
- Spread the sprouts evenly on the prepared baking sheet.
- Sprinkle the chopped bacon over the Brussels sprouts.
- Bake for 20-25 minutes, flipping halfway through, until both the sprouts and bacon are golden and crisp.
- Meanwhile, in a small saucepan over medium heat, combine the maple syrup, bourbon, Dijon mustard, apple cider vinegar, and garlic powder. Simmer for 4-5 minutes until slightly thickened.
- Once the Brussels sprouts and bacon are done, drizzle the warm glaze over the hot veggies. Toss gently to combine and serve immediately.
Notes
For a bacon alternative, use turkey bacon or a plant-based version. Serve with freshly chopped parsley for presentation.
