- 2 large boneless, skinless chicken breasts, sliced thinly
- Salt and pepper, to taste
- 2 tbsp olive oil, for searing
- 3 cloves garlic, minced
- 1/3 cup sun-dried tomatoes, chopped
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup Parmesan cheese, freshly grated
- 1 tsp Italian seasoning
- 1/2 tsp crushed red pepper flakes (optional for spice)
- 8 oz pasta (penne, rigatoni, or fettuccine)
- Fresh basil, for garnish
Instructions
- Season the sliced chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat.
- Add the chicken to the skillet, cooking until golden brown and cooked through, about 5-7 minutes. Remove the chicken and set aside.
- In the same skillet, add minced garlic and sauté until fragrant, around 1 minute.
- Stir in the chopped sun-dried tomatoes and chicken broth. Bring to a gentle simmer.
- Add heavy cream, Parmesan cheese, Italian seasoning, and crushed red pepper flakes if using. Stir well and let it thicken for about 3-5 minutes.
- Return the seared chicken to the skillet, add cooked pasta, and mix until everything is coated in the creamy sauce.
- Garnish with fresh basil before serving.
Notes
For a lighter sauce, substitute heavy cream with half and half. You can also customize this dish by adding olives, capers, spinach, or zucchini noodles.
