Ingredients

  • 2 large boneless, skinless chicken breasts, sliced thinly
  • Salt and pepper, to taste
  • 2 tbsp olive oil, for searing
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, freshly grated
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional for spice)
  • 8 oz pasta (penne, rigatoni, or fettuccine)
  • Fresh basil, for garnish

Instructions

  1. Season the sliced chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat.
  2. Add the chicken to the skillet, cooking until golden brown and cooked through, about 5-7 minutes. Remove the chicken and set aside.
  3. In the same skillet, add minced garlic and sauté until fragrant, around 1 minute.
  4. Stir in the chopped sun-dried tomatoes and chicken broth. Bring to a gentle simmer.
  5. Add heavy cream, Parmesan cheese, Italian seasoning, and crushed red pepper flakes if using. Stir well and let it thicken for about 3-5 minutes.
  6. Return the seared chicken to the skillet, add cooked pasta, and mix until everything is coated in the creamy sauce.
  7. Garnish with fresh basil before serving.

Notes

For a lighter sauce, substitute heavy cream with half and half. You can also customize this dish by adding olives, capers, spinach, or zucchini noodles.
