- 2 boneless, skinless chicken breasts
- 8 oz pasta (fettuccine or penne)
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta according to the package instructions. Once done, drain and set it aside.
- In a large skillet, heat a splash of olive oil over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 5-7 minutes on each side until they are golden brown and cooked through. Once done, remove the chicken and set aside.
- Using the same skillet, toss in the minced garlic and sauté for about a minute until fragrant.
- Pour in the chicken broth and heavy cream, adding Italian seasoning; bring this to a gentle simmer.
- Stir in the grated Parmesan cheese, allowing it to melt and combine beautifully with the sauce.
- Slice the cooked chicken and return it to the skillet, then add in the cooked pasta. Toss everything together, ensuring each piece is coated in the creamy goodness.
- Serve warm, garnished with chopped fresh parsley.
