- 2 chicken breasts
- 1 cup heavy cream
- 4 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup carrots, sliced
- 1 cup celery, sliced
- 2 teaspoons dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, sauté onion and garlic until translucent.
- Add carrots and celery, cooking until tender.
- Stir in chicken breasts and cook until browned.
- Pour in chicken broth and bring to a simmer.
- Add thyme, rosemary, salt, and pepper.
- Reduce heat, stir in heavy cream, and simmer for 10 minutes.
- Remove chicken, shred it, and return to the pot.
- Serve hot, garnished with fresh parsley.
Notes
For a thicker soup, add a tablespoon of flour or cornstarch mixed with water during cooking. This soup tastes even better the next day.
