Ingredients

  • 2 chicken breasts
  • 1 cup heavy cream
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, sauté onion and garlic until translucent.
  2. Add carrots and celery, cooking until tender.
  3. Stir in chicken breasts and cook until browned.
  4. Pour in chicken broth and bring to a simmer.
  5. Add thyme, rosemary, salt, and pepper.
  6. Reduce heat, stir in heavy cream, and simmer for 10 minutes.
  7. Remove chicken, shred it, and return to the pot.
  8. Serve hot, garnished with fresh parsley.

Notes

For a thicker soup, add a tablespoon of flour or cornstarch mixed with water during cooking. This soup tastes even better the next day.
