Instructions

  1. Heat a little oil in a large skillet over medium-high heat.
  2. Season the chicken breasts with salt and pepper, then brown them in the skillet for about 5–7 minutes per side.
  3. Remove the chicken from the pan and set it aside.
  4. Introduce the minced garlic in the same skillet and cook for a minute until fragrant.
  5. Stir in the chicken broth, heavy cream, sun-dried tomatoes, and Italian seasoning.
  6. Add the orzo, bringing the mixture to a gentle simmer.
  7. Return the chicken to the skillet, cover, and simmer for about 15 minutes.
  8. Finish by stirring in the spinach until just wilted.
  9. Serve hot, topped with Parmesan cheese and fresh basil.

Notes

For a richer flavor, marinate chicken in lemon juice and herbs beforehand. Pair with salad or roasted vegetables.
