- 4 boneless, skinless chicken breasts
- 1 cup orzo pasta
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup chopped spinach
- 1/2 cup chopped sun-dried tomatoes
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Parmesan cheese, for serving
- Fresh basil, for garnish
Instructions
- Heat a little oil in a large skillet over medium-high heat.
- Season the chicken breasts with salt and pepper, then brown them in the skillet for about 5–7 minutes per side.
- Remove the chicken from the pan and set it aside.
- Introduce the minced garlic in the same skillet and cook for a minute until fragrant.
- Stir in the chicken broth, heavy cream, sun-dried tomatoes, and Italian seasoning.
- Add the orzo, bringing the mixture to a gentle simmer.
- Return the chicken to the skillet, cover, and simmer for about 15 minutes.
- Finish by stirring in the spinach until just wilted.
- Serve hot, topped with Parmesan cheese and fresh basil.
Notes
For a richer flavor, marinate chicken in lemon juice and herbs beforehand. Pair with salad or roasted vegetables.
